Cranberry Bison Meatballs

Sweet and zesty festive cranberry meatballs. A perfect addition to any holiday party!

Ingredients:

Meatballs:

  • 1 lb Ground Bison
  • 1 cup panko bread crumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup minced onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Sauce:

  • 3/4 cup jellied cranberry sauce
  • 1/2 cup chili sauce
  • 1/4 cup bbq sauce
  • 2 Tbsp. orange juice
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon sriracha chili sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Cooking Instructions:

  1. In a medium mixing bowl, combine ground bison, panko bread crumbs, egg, milk, minced onion, salt and pepper. Mix well, then roll into 1 1/2 inch meatballs balls and place in rows on a rimmed baking sheet.
  2. Airfry at 400 degrees for 20-25 minutes, or until fully cooked through.
  3. In a large saucepan, combine ingredients for sauce. Bring to a boil, lower heat, and simmer until sauce is thickened and reduced. 
  4. Add the meatballs to the saucepan and stir to coat.
  5.  Serve with toothpicks!
