Homemade Biscuits and Bison Sausage Gravy

Use our Bison Breakfast Sausage for a delicious homestyle sausage gravy served over biscuits.
Gravy
• 1 lb. Bison Breakfast Sausage
• 1/2 cup All-Purpose Flour
• Milk, whole or 2%
• Salt and Pepper, to taste
Biscuits
• 2 cups All-Purpose Flour
• 1 Tbsp Baking Powder
• 1 Tbsp Granulated Sugar
• 2 tsp Salt
• 2/3 stick Butter (cold), cut into small pieces
• 3/4 cup Buttermilk
For Biscuits:
Preheat oven to 425*F and spray a cookie sheet with nonstick spray or use parchment paper to line the sheet pan.
Combine dry ingredients in a large bowl and mix well. Cut the butter or use your fingers to press the butter throughout the flour into small pebble size pieces.
Add buttermilk, stirring until just combined. Do not over mix.
Either make drop biscuits or roll out and cut biscuits.
Bake on 425*F until tops are beginning to just turn lightly golden brown.
If desired, brush with melted butter immediately after removing from oven.
For Gravy:
Simmer Ground Bison Breakfast Sausage until cooked. Add flour to the skillet, without draining the fat and cook for 3 minutes.
Add milk slowly to the bison mix being sure to stir continually. Add enough milk to make a thin gravy and then simmer until it thickens.
Add salt and pepper to taste.
Serve gravy over warm biscuits.
Though our bison breakfast sausage is leaner than most other breakfast sausages, you will notice more fat run-off than you may be used to. This is due to the way the fat is bonded with the meat. Luckily, it's perfect for creating a delicious gravy with this recipe!
