Bison Ragu

Enjoy this hearty and delicious slow cooker bison ragu on a cold day or to meal prep for the week. This meal is paleo, whole30 and gluten free.
•1/2 cup almond milk
•1/2 cup pomegranate juice (can sub cranberry juice)
•1/2 cup beef broth
•1 cup sliced or diced white mushrooms
•1 cup diced carrots
•1 cup diced white onions
•1 cup diced celery
•1 tbsp minced garlic
•1 (14.5 oz) can diced tomatoes, drained
•1 (6 oz) can tomato paste
•2 tsp salt
•2 tsp dried parsley flakes
•1 tsp black pepper
Place the bison stew meat in the slow cooker, and then add in all of the ingredients. Mix everything together, just enough to distribute the ingredients around.
Cook on low for 2.5 hours, or on high for 1 hour. The bison can become tough if over cooked so we do recommend checking the texture of the meat at 1 hour no matter what to ensure you don't over cook it.
This tastes great with mashed potatoes, gluten- free noodles, or even rice.

Bison contains less fat and cooking time should be based on internal temperature. If you are unfamiliar with smoking bison be sure to cook low and slow.
