Smoked Bison Ribs

Enjoy these fall of the bone smoky and sweet peach bison ribs.
Preheat smoker to 250 degrees. We used hickory smoked pellets.
While your smoker is preheating, you will begin to prep your ribs. Start by patting your ribs dry and begin moving the membrane. This helps allow the smoke to penetrate the meat and creates easier to eat ribs.
Now add a generous layer of yellow mustard to each side. Grab your Treager BBQ Rub and season both sides.
Once your smoker reaches 250 you can place your rack in. Smoke for about 1 1/2 hours.
Now take your BBQ sauce and lather each side. Increase smoker to 350 degree and smoke for 5 minutes. Flip ribs and cook for additional 5 minutes. Add another layer of BBQ sauce and cook for 5 more minutes.
Remove from heat and let rest 10-15 minutes.

Bison contains less fat and cooking time may vary. If you are unfamiliar with smoking bison be sure to cook low and slow.
